I couldn't reproduce this on my machine.
Could you verify that you have the latest sources?
Your src/falcon/hostscreen.c file should have "sizeChanged" variable
which I had added to deal with this kind of an issue.
If you have it, please try commenting out this part of code:
if (sdlscrn && (!bpp || sdlscrn->format->BitsPerPixel == bpp) &&
...
{
/* skip redundant video mode change */
return;
}
from HostScreen_setWindowSize() in hostscreen.c and tell whether that helps.

Couldn't reproduce this either. (With CMake compiled Hatari, I was able
to get Hatari to segfault once though.)
Can somebody else on the list reproduce these issues?

What means it "never recorded"? At which step it didn't take your
selection into account?
